Baked Squash With Basil And Feta - cooking recipe

Ingredients
    1/2 None winter squash, deseeded, skin-on, cut into 3/4 inch wedges
    1 tbsp olive oil
    1 (9.5 oz) jar char-grilled or roasted peppers, drained, chopped
    2/3 cup breadcrumbs
    3.5 oz feta cheese, crumbled
    2 None tomatoes, deseeded, chopped
    1/4 cup pine nuts
    2 tbsp fresh basil, roughly chopped + extra, to garnish
    1 clove garlic, minced
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper. Lightly coat squash with olive oil, season and place on baking tray. Roast for 15-20 mins, until just tender.
    Meanwhile, combine remaining ingredients. Season. Distribute over squash wedges and bake for 10-15 mins, until golden.
    Serve garnished with extra basil.
