Ingredients

1 tbsp vegetable oil
1 None onion, about 8 oz, sliced thinly
1 tsp mustard seeds
1/4 tsp ground nutmeg
30 oz trimmed spinach, chopped
1/2 tbsp lemon juice
1 oz fresh mint, coarsely chopped
Preparation

Heat oil in large, deep frying pan and cook onion, stirring, until soft. Add mustard seeds, nutmeg and spinach. Cook, stirring, until spinach is just wilted. Stir in lemon juice and mint to serve.
