Avocado Chicken Burgers - cooking recipe
Ingredients

1 lb ground chicken
3 oz breadcrumbs
2 None ripe avocados, 1 mashed, 1 sliced
1 None small red onion, finely chopped
4 oz canned corn, drained
2 tbsp flat-leaf parsley, chopped
1 None large egg, lightly beaten
2/3 cup flour
2 tbsp olive oil
8 None rolls, split in half
None None mayonnaise, to serve
None None lettuce leaves, to serve
None None sliced tomatoes, to serve
None None potato chips, to serve
Preparation

For the burgers, combine the chicken, breadcrumbs, avocado, onion, corn, parsley and egg in a bowl. Mix well and season then divide into 8 portions. Roll into balls then flatten into discs. Dust with flour, shaking off excess. Arrange on a plate and chill, covered, for 30 mins.
Heat oil in a large frying pan and cook burgers in 2 batches, for 4-5 mins on each side, until golden-brown and cooked through.
Spread each roll with mayonnaise and top with lettuce, burgers and tomato and avocado slices. Serve with chips and extra mayonnaise or other sauce of your choice.
