Spaghetti And Meatballs Omelette - cooking recipe

Ingredients
    100 g frozen peas, thawed
    100 g spaghetti
    2 None tomatoes, finely diced
    1 tbsp + 2 tsp olive oil
    125 g sausage meat, formed into meatballs
    3 sprigs parsley, coarsely chopped
    8 None eggs
    100 ml semi skimmed milk
    None None Sliced tomato and parsley leaves, to garnish
Preparation
    Cook spaghetti in boiling salted water according to package directions. Drain and rinse under cold water.
    For the meatballs, heat 1 tbsp oil and sear meatballs for 3-4 mins. Remove from heat and set aside.
    To prepare the omelette, whisk together eggs and milk. Season. Heat 1/2 tsp oil in a frying pan, add 1/4 of the egg mixture and cook over medium heat for 3 mins. Add 1/4 of prepared ingredients--peas, spaghetti, diced tomatoes, parsley and meatballs--to omelette and cook another 2 mins. Keep warm while making 3 more omelettes. Serve garnished with sliced tomato and parsley leaves.
