Baked Salmon With Spinach And Ricotta Almond Cream - cooking recipe

Ingredients
    2/3 cup ricotta cheese
    3/4 cup ground almonds
    2 None cloves garlic, chopped
    1/4 cup grated Parmesan cheese
    1 None medium egg
    1 3/4 lbs skinless salmon fillet
    5 cups (3.5 oz) baby spinach, washed and drained
    3 tbsp olive oil
Preparation
    Preheat the oven to 350\u00b0F. Mix together the ricotta, almonds, garlic, Parmesan and egg. Season with salt and pepper. Make a horizontal cut in the salmon, but don't separate the 2 halves.
    Spread all but 3 tbsp of the ricotta mixture inside the salmon, along with half the spinach. Spread the remaining ricotta on top, then layer remaining spinach leaves on top. Tie together with kitchen twine and place in a greased ovenproof dish. Drizzle with olive oil and season with salt and pepper. Bake for 25-30 mins. Serve with the pan juices.
