Japanese Stir-Fried Beef - cooking recipe

Ingredients
    2 tbsp soy sauce
    1 tbsp rice vinegar
    1 tbsp mirin (rice wine)
    2 tsp dijon mustard
    1 tsp granulated sugar
    1/2 tsp sesame oil
    2/3 inch fresh ginger, peeled, grated
    1 clove garlic, minced
    1 tbsp vegetable oil
    1 lb sirloin steak, thinly sliced
    2 None carrots, peeled, sliced on a bias
    1 None red bell pepper, seeded, sliced
    8 None spring onions, sliced
    7 oz snow peas, trimmed, halved
    None None steamed white rice, to serve
Preparation
    Combine soy sauce, vinegar, mirin, mustard, sugar, sesame oil, ginger and garlic. Pour 1/2 over beef and set aside to marinate for 10 mins.
    Heat oil in a wok or large frying pan over high heat. Working in batches, stir-fry beef for 1 min. Set aside. Add carrots, pepper and spring onions. Stir-fry for 1-2 mins. Return beef to pan along with snow peas, remaining marinade and 1/4 cup water. Simmer for 1-2 mins, until vegetables are just tender.
    Serve with steamed white rice.
