Tuna And Zucchini Patties - cooking recipe

Ingredients
    1 None baked potato, peeled, roughly mashed
    1 (15 oz) can tuna, drained, flaked
    1 None zucchini, grated
    1 None carrot, grated
    1/4 cup Cheddar cheese, grated
    2 tbsp fresh parsley, chopped
    1 tbsp lemon juice
    1 cup breadcrumbs
    1 tbsp olive oil
    None None green beans, to serve
    None None lemon wedges, to serve
Preparation
    Combine potato, tuna, zucchini, carrot, cheese, parsley and lemon juice. Season. Shape into 10 patties, coat in breadcrumbs then chill for 20 mins.
    Heat oil in a large frying pan over medium heat. Working in batches, cook patties for 3-5 mins per side, until golden. Drain on paper towels. Serve with green beans and lemon wedges.
