Spicy Chicken And Corn Bake - cooking recipe
Ingredients

12 small potatoes, peeled
3 tbsp olive oil
1/2 tsp paprika
1 tsp ground cumin
1 tbsp chilli flakes
12 rashers streaky bacon
1 None red pepper, deseeded and cut into strips
250 g shallots, peeled and halved
1 None green jalapeno chilli, deseeded and roughly chopped
Preparation

Cook the potatoes in boiling water for 20 mins until tender. Drain and set aside to cool.
Preheat the oven to 400\u00b0F. Mix together the oil, paprika, cumin and crushed red pepper with a pinch of salt. Rub the mixture onto the chicken drumsticks. Transfer to a large baking dish or 2 smaller ones. Bake for 15 mins.
Meanwhile, wrap the potatoes in the bacon. Add them, along with the pepper strips, corn, shallots, and jalapeno to the chicken and cook for an additional 20-25 mins.
