4 tbsp (1/2 stick) butter, softened
1 cup granulated sugar
1/4 cup self-rising flour
2 None lemons, peel finely grated
2/3 cup lemon juice
2/3 cup milk
3 None eggs, separated
None None Powdered sugar, to dust
None None Whipped cream, to serve
Preparation

Preheat the oven to 350\u00b0F. Lightly grease four 1-cup ramekins.
Beat butter and granulated sugar in a large bowl with an electric mixer until combined. Mix in flour and lemon peel.
Whisk lemon juice, milk and egg yolks in a medium bowl. Fold into butter mixture.
Beat egg whites in a clean medium bowl with an electric mixer until soft peaks form. Gently fold into batter. Divide batter evenly among ramekins.
Place ramekins in a large baking dish. Pour in enough hot water into baking dish to come halfway up the sides of ramekins.
Bake, uncovered, 20-25 mins, until firm. Dust with powdered sugar and serve with whipped cream.
