Zucchini And Rice Tart - cooking recipe

Ingredients
    1 cup brown rice
    1 tbsp vegetable or olive oil
    1 medium red onion, finely chopped
    1/2 tsp ground cinnamon
    2 medium zucchini, coarsely grated
    4 oz baby spinach leaves
    2 tbsp chopped dill
    1 tsp finely grated lemon peel
    4 oz feta cheese, coarsely crumbled
    1/2 cup pitted black olives, sliced
    4 None eggs, lightly beaten
Preparation
    Grease a foil-lined 9 inch springform pan; place on a baking pan. Cook rice in a large saucepan of boiling water for 30 mins or until tender. Rinse under cold water; drain well.
    Preheat the oven to 350\u00b0F. Heat oil in a large skillet on medium heat. Add onion and cinnamon; cook and stir for 5 mins or until onion softens. Add zucchini; cook and stir for 5 mins. Stir in spinach. Transfer mixture to a large bowl. Stir in dill, lemon peel, feta, olives, rice and egg until well combined. Pour mixture into prepared pan; smooth the top.
    Bake for 35-40 mins or until golden. Let stand for 10 mins. Cut into wedges to serve.
