Chili Marinated Beef In Spicy Coconut Sauce - cooking recipe

3 1/3 lb beef chuck steak, coarsely chopped
3 tbsp ghee
2 None medium red peppers, finely chopped
2 None medium Spanish onions, finely chopped
1/2 cup beef stock
1/2 cup coconut milk
1 None cinnamon stick
5 None dried curry leaves
1/2 cup fresh cilantro leaves, chopped
1/3 cup white vinegar
2 None fresh small red Thai chilies, thinly sliced
2 tbsp tomato paste
2 None garlic, minced
3 None cardamom pods, crushed
2 tsp cumin seeds
1 tsp ground turmeric
Preparation

Combine vinegar, chilies, tomato paste, garlic and spices in a large bowl. Add beef and toss to coat. Cover and chill for 3 hours or overnight.
Heat 1 1/2 tbsp ghee in a large saucepan. Working in batches, cook beef, stirring, until browned. Set aside.
Add remaining ghee to pan. Cook peppers and onions, stirring, until onion is soft. Return beef to pan along with beef stock, coconut milk, cinnamon and curry leaves. Simmer, covered, for 1 hour, stirring occasionally. Remove cover and simmer for 30 mins, or until beef is tender. Discard cinnamon stick.
Fold in cilantro to serve.
