Turkey Breast Wrapped In Prosciutto With Roast Pears - cooking recipe

2 1/4 lb turkey breast
6 slices prosciutto
4 None medium pears, cored, thickly sliced
1 tbsp brown sugar
2 tbsp extra virgin olive oil
1/2 cup verjus
1 1/2 tbsp butter, chopped
Preparation

Preheat the oven to 400\u00b0F. Wrap turkey in prosciutto, using butcher's twine to shape into a roll. Season then place in a greased roasting pan and cover tightly with foil. Roast, covered, for 40 mins.
Meanwhile, combine sliced pear, sugar and 1 tbsp oil.
Baste turkey with remaining olive oil then increase oven temperature to 425\u00b0F. Add pears and roast, uncovered, for another 35 mins, or until turkey is cooked through and pears are browned and tender.
Remove turkey and pears from baking dish, cover with foil and let rest for 10 mins. Place roasting pan over stove, add verjus and cook, stirring, over high heat, for about 1 min, or until thickened slightly. Remove from heat. Whisk in butter then transfer to a serving vessel. Serve with sliced turkey and pears.
