Zucchini Ribbon Salad - cooking recipe
Ingredients

2 None medium zucchini and/or yellow squash, sliced into ribbons
3 None large carrots, peeled, sliced into ribbons
1 None large shallot, finely chopped
2 tbsp olive oil
1 tbsp white wine vinegar
1 tsp Dijon mustard
Preparation

Combine zucchini, carrots and shallot. Whisk together olive oil, vinegar and mustard. Season then pour over vegetable mixture and toss to combine. Serve.
