Nectarine Crumble Muffins - cooking recipe

75 g self-raising flour
125 g melted butter
110 g caster sugar
125 ml sour cream
2 large eggs
2 tbsp custard powder
1 tsp vanilla essence
4 None nectarines, stones removed, thinly sliced

40 g plain flour
50 g brown sugar
1/2 tsp baking powder
1/2 tsp ground cinnamon
25 g chopped chilled butter
Preparation

Preheat oven to 180\u00b0C./ 160\u00b0C. fan. Gas mark 4. Line a 12-hole muffin pan with paper muffin cases.
In a large bowl, using an electric mixer, beat flour, butter, sugar, sour cream. eggs, custard powder and vanilla together on low for 2-3 minutes, until smooth. Stir three-quarters of the chopped nectarines through.
Spoon mixture into cases, until two-thirds full. Press extra nectarine slices on top of each muffin.
To make crumble topping, in a small bowl, combine all ingredients. Using fingertips, rub in butter to form crumbs. Sprinkle topping evenly over top of each muffin.
Bake 25-30 minutes, until cooked when tested with a skewer. Transfer to a wire rack to cool completely. Store in an airtight container.
