White Chocolate And Berry Cheesecake Slice - cooking recipe

6 oz graham crackers, coarsely chopped
4 tbsp (1/2 stick) butter, melted
2 tsp unflavored gelatin
1 1/2 pkg (12 oz) cream cheese, softened
1/3 cup sugar
1 1/4 cups light cream
6 oz white chocolate, melted
1 3/4 cups mixed berries

Grease and line an 8-inch square baking pan with parchment paper, extending paper above 2 opposite sides for handles. Blend or process graham crackers until mixture resembles fine breadcrumbs. Add butter; process until just combined. Using hand, press mixture into bottom of prepared pan. Refrigerate until firm.
Sprinkle gelatin over 1/4 cup boiling water in a heatproof measuring cup. Place cup in small saucepan of simmering water; stir until gelatin dissolves. Cool for 5 mins.
Beat cream cheese and sugar in large bowl with electric mixer until smooth. Beat in cream. Stir in gelatin mixture, chocolate and 1 cup of the berries. Pour filling into pan. Sprinkle with remaining 3/4 cup berries.
Refrigerate cheesecake for 3 hours or overnight.
