Hasselback Potatoes - cooking recipe

Ingredients
    6 None Idaho / russet potatoes (about 6 oz each)
    4 oz crumbled feta cheese with garlic and herbs, like Athenos
    1 tsp chopped fresh thyme leaves
    1 tbsp chopped parsley
    3 tbsp butter, melted
    None None red pepper curls for garnish
Preparation
    Heat broiler. Pierce potatoes. In a partially covered microwave-safe pie dish, cook potatoes in 1 tablespoon of water in microwave for 12 mins or until fork tender. In a small bowl, combine cheese, thyme, and parsley. Season with salt and ground black pepper, if desired. Cut deep parallel slices into each potato crosswise. Stuff slices with cheese mixture. Place potatoes on a foil lined baking sheet. Brush tops with butter. Broil for 3-5 mins or until cheese is slightly browned. Serve.
