Arugula & Butternut Squash Salad - cooking recipe

Ingredients
    1 lb cubed butternut squash
    1 1/2 tbsp vegetable oil
    1/3 cup balsamic dressing
    10 oz baby arugula
    1 None small red onion, sliced
    1/2 cup chopped toasted walnuts
    1/2 cup crumbled goat cheese
Preparation
    Place squash in microwave-safe bowl with 1/4 cup water. Cover with plastic wrap and microwave for 10 mins, stirring once. Drain. In a large skillet, heat oil over medium heat. Cook squash for 4-5 mins, stirring occasionally, until lightly browned. Season.
    Toss together dressing, squash, arugula, onion and walnuts. Divide between salad plates. Garnish with goat cheese.
