Country Chicken And Vegetables With Pepper Sauce - cooking recipe

Ingredients
    1 lb new potatoes, halved
    1 None small sweet potato, peeled, chopped
    2 None small leeks, trimmed, washed, sliced
    1 bulb garlic, cloves separated
    1 bunch fresh thyme
    1/2 cup chicken stock
    1/2 cup white wine
    4 1/4 lb whole chicken, cleaned, dried, skin removed, quartered
    None None Pepper Sauce
    1 tbsp olive oil
    1 None onion, chopped
    2 cloves garlic, crushed
    1 (10 oz) jar char-grilled peppers, drained, chopped
    1/4 cup tomato puree
Preparation
    Preheat oven to 350\u00b0F.
    Arrange potatoes, sweet potato, leek, garlic cloves and thyme sprigs in a large baking dish. Add stock and wine and bake for 20 mins. Arrange chicken over top and bake for 25-30 mins, basting occasionally. Stir vegetables then bake for another 10-15 mins, until chicken is cooked through. Season.
    Meanwhile, for the pepper sauce, heat oil over high heat. Saute onion and garlic for 2-3 mins, until tender. Add remaining ingredients then puree until smooth. Season.
    Serve chicken and vegetables with pepper sauce.
