Pulled Beef With La Casa Seasoning - cooking recipe

Ingredients
    2 tbsp coriander seeds
    1 tbsp cumin seeds
    1 tsp red pepper flakes
    1 None dried chipotle chili pepper, torn into pieces
    1 1/2 tbsp smoked paprika
    1/2 tsp cayenne pepper (optional, add if you want extra heat)
    2 tbsp cornstarch
    1 tsp sea salt
    1/2 tsp ground black pepper
    None None FOR THE PULLED BEEF
    1 1/3 lbs beef top round
    None None Olive oil, for drizzling
Preparation
    For the la casa seasoning, place the coriander and cumin seeds in a preheated, almost smoking, dry cast-iron skillet. Cook until they are fragrant and making a popping sound. Immediately remove spices from the pan so they don't burn or this will give a bitter taste. Allow to cool.
    In a grinder, small food processor or mortar and pestle, place the cooled seeds, red pepper flakes and dried chipotle chili pepper. Grind to a powder. Add the remaining ingredients and process or stir until combined. Store in an airtight jar until ready to use.
    For the pulled beef, preheat the oven to 325\u00b0F. Rub the beef all over with a generous amount of la casa seasoning. Place in a roasting pan. Drizzle with olive oil and season lightly. Add 1 cup water. Cover with a lid or foil.
    Bake for at least 3 hours. Check the beef after 1 1/2 hours and add more water if it has dried out. The meat is ready when it pulls apart effortlessly and the meat fibers form threads when you pull it with two forks.
