Falafel Sandwiches With Cabbage Salad - cooking recipe

Ingredients
    1/2 None large tomato, chopped coarsely
    2 tbsp coarsely chopped fresh flat-leaf parsley leaves
    1/2 None small Persian cucumber, chopped coarsely
    1 None large spring onion, chopped coarsely
    1/3 lb red cabbage, shredded
    1 tbsp olive oil
    1 tbsp lemon juice
    6 None prepared mini falafel balls
    2 None small pita breads
    1/2 cup baba ghanoush
    8 None small pickled chili peppers, drained (optional)
Preparation
    For the salad, combine tomato, parsley, cucumber, spring onion, cabbage and combined oil and lemon juice in a medium bowl. Season to taste.
    Heat falafel in microwave 1 min on high, or until heated through. Break up with a fork.
    To assemble, cut pita in half. Spread with baba ghanoush. Fill with falafel, salad and peppers, if using. Serve immediately.
