Roasted Pork Tenderloin With Balsamic Pears And Red Onion - cooking recipe

2 tbsp vegetable oil
1 2/3 lbs pork tenderloin
2 tbsp butter
1 None red onion, cut into wedges
2 None pears, peeled, cored and thinly sliced
2 tbsp balsamic vinegar
1/2 cup chicken stock
2 tbsp honey
Preparation

Preheat the oven to 425\u00b0F.
Heat oil in large skillet on high heat. Cook pork for 2-3 mins each side until browned all over. Transfer pork to a baking pan.
Roast for 5-10 mins until cooked to desired doneness. Let stand, loosely covered with foil, for 5 mins.
Meanwhile, melt butter in the same skillet on medium-high heat. Saute onion for 2-3 mins until tender. Add pears and saute for 4-5 mins. Stir in vinegar; bring to a boil. Add stock and honey and simmer for 3 mins.
Slice pork thinly. Serve pork topped with pears and sauce.
