3 tbsp butter, softened
1/3 cup sugar
1 None large egg yolk
2 tbsp self raising flour
1/2 cup all purpose flour
2/3 cup cherry jam
1 tbsp cherry brandy
1/4 cup sliced almonds

1/4 cup sugar
1 3/4 cups shredded coconut
Preparation

Preheat the oven to 350\u00b0F. Grease an 8 x 12 inch brownie pan and line with baking paper, extending the paper 2 inches over long sides.
Beat the butter, sugar and egg yolk in a small bowl with an electric mixer until light and fluffy. Stir in the sifted flours. Press the mixture into the pan. Combine the jam and brandy in a bowl and spread over the mixture in the pan.
To make the topping, beat the eggs and sugar together with a fork in medium bowl, then stir in the coconut.
Sprinkle the topping over the jam mixture then sprinkle the topping with nuts and press down gently.
Bake for about 30 mins, then allow to cool in the pan before cutting.
