Lamb, Caramelized Onion And Sweet Potato Cups - cooking recipe

Ingredients
    14 oz sweet potatoes, cut into small cubes
    None None spray oil
    3 None sheets filo dough
    3 tbsp butter, melted
    2 tbsp olive oil
    2 None red onions, thinly sliced
    1 tbsp brown sugar
    1 tbsp balsamic vinegar
    2 None lamb fillets, trimmed
    1/4 cup goat's cheese, crumbled
    1 tbsp maple syrup
    None None mint leaves and yogurt, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease a 12-hole medium muffin pan.
    Place sweet potatoes on a lightly greased baking tray. Spray with oil and season to taste. Bake for 20-25 minutes, until tender. Set sweet potatoes aside.
    Working quickly, layer filo sheets together, brushing each with butter. Cut evenly into 8 squares. Gently push squares into prepared holes. Bake for 8-10 minutes until golden.
    Meanwhile, heat half the oil in a medium pan over high heat. Saute onions for 4-5 minutes, until tender and lightly browned. Blend in sugar and vinegar, stirring over low heat, for 10-15 minutes, until caramelized. Transfer to a bowl.
    Heat remaining oil in same cleaned pan on medium. Cook lamb for 3-4 minutes each side, until cooked as desired. Remove from pan and rest, covered, 5 minutes. Dice into cubes.
    Combine lamb and sweet potatoes with onions. Divide mixture evenly between baskets. Sprinkle with cheese and drizzle with maple syrup. Top with mint leaves and serve with yogurt.
