Chicken Kebabs With Sautéed Vegetables - cooking recipe
Ingredients

1 1/4 lb chicken breast, cut into cubes
3 tbsp canola oil
None None paprika, to taste
2 None red bell peppers, deseeded and diced
2/3 lb chestnut mushrooms, halved
2 None onions, peeled and cut into wedges
2 tbsp tomato paste
1/2 cup vegetable stock
2/3 cup creme fraiche or sour cream
None None ciabatta bread, to serve
Preparation

Season chicken then thread onto 4 wooden skewers. Heat oil in a large frying pan and saute chicken for 10 mins, turning. Season with black pepper and paprika. Remove from pan and keep warm.
Add peppers, mushrooms and onions to pan and saute until softened. Season then add tomato paste. Cook for 1 min, then add stock. Bring to a boil and simmer for 8 mins. Add creme fraiche, or sour cream, if using. Arrange vegetables and kebabs on plates and serve with ciabatta.
