Buttermilk And Cheddar Biscuits - cooking recipe

Ingredients
    2 1/4 cups healthy baking mix like Bisquick Heart Smart
    4 tbsp butter, chopped, frozen
    1/2 cup grated sharp Cheddar cheese
    2 tbsp grated Parmesan cheese
    1/4 cup finely chopped fresh chives
    1 cup buttermilk
Preparation
    Preheat oven to 425\u00b0F. Coat a baking sheet with cooking spray.
    In a large bowl, mix together baking mix and frozen butter with a pastry blender until mixture resembles corn meal. Stir in cheese and chives. Mix in buttermilk until flour is just moistened. With a 2 tablespoon portion scoop, drop dough onto prepared pan. Bake until light golden brown, around 13-15 mins. Serve warm.
