Ingredients

1 cup self-rising flour, sifted + 2 tbsp
1 3/4 cups corn flakes
2 1/3 cups rolled oats
1/2 cup desiccated coconut
1/2 cup brown sugar
2 oz dried apricots, finely chopped
2 oz raisins
2/3 cup unsalted butter, melted
1 None egg, lightly beaten
1 tbsp honey
Preparation

Preheat oven to 350\u00b0F. Grease and line 2 baking trays.
Combine dry ingredients. Mix in butter, egg and honey until combined. Roll into balls, each around 2 tbsp. Place on prepared trays, leaving 1 1/2 inches of space between each. Press lightly with fingertips to flatten. Bake for 10-12 mins. Let cool on trays.
