Chili Beans With Tomato Sauce - cooking recipe

Ingredients
    1 tbsp olive oil
    6 slices bacon, finely chopped
    1 stalk celery, trimmed, finely chopped
    1 None small Spanish onion, finely chopped
    1 None small carrot, finely chopped
    1 None fresh long red chili, finely chopped
    1/3 cup tomato paste
    3 cups tomato sauce
    3/4 cup chicken stock
    2 tsp sugar
    1 (28 oz) can cannellini beans, drained, rinsed
    3 tbsp fresh flat-leaf parsley leaves, coarsely chopped
Preparation
    Heat oil in a frying pan over medium heat. Cook bacon, celery, onion, carrot and chili, stirring, until onion softens. Add tomato paste and cook, stirring, for 1 min. Transfer to a 4.5 quart slow cooker. Stir in tomato sauce, chicken stock, sugar and beans. Cook, covered, on low for 8 hours.
    Stir in parsley and season to taste.
