Bean Salad With Smoked Salmon - cooking recipe

Ingredients
    1 lb frozen fava beans
    1 can (15 oz) white beans, drained and rinsed
    1/2 small red onion, thinly sliced
    1 small cucumber, coarsely chopped
    1 tsp finely grated lemon peel
    2 tbsp lemon juice
    1 tbsp olive oil
    1/4 cup drained capers, rinsed
    10 oz sliced smoked salmon
    1/4 cup olive oil
Preparation
    Boil, steam or microwave the fava beans until just tender. Peel and place in a medium bowl. Add the white beans, onion, cucumber, lemon peel and juice, and oil; toss gently to combine.
    Pat the capers dry with paper towels. Heat the oil in a small skillet on medium heat. Add the capers carefully (they will splatter). Fry for about 2 mins. Drain on paper towels.
    Arrange the salmon slices on serving plates. Top with fried capers. Serve with bean salad and lemon wedges, if desired.
