Herb Crusted Salmon With Linguine - cooking recipe

Ingredients
    1/2 bunch parsley, finely chopped
    1/4 bunch chives, finely chopped
    2 cloves garlic, peeled, finely chopped
    1 cup Parmesan, grated
    1/2 cup breadcrumbs
    3 tbsp all purpose flour
    2 None eggs
    4 None salmon fillets, skinned
    1 tsp butter
    4 tbsp olive oil
    1 14 oz package linguine
    1/2 None lemon, sliced for garnish
Preparation
    Combine chopped herbs, garlic and Parmesan with breadcrumbs and season. Set aside 1 tbsp of the mixture. Sprinkle the flour on a plate. Whisk eggs in a deep dish.
    Dredge the salmon fillets one at a time in the in the flour, then the eggs and then the breadcrumbs. Heat the butter and 2 tbsp oil in a large nonstick frying pan. Cook the fillets over a low heat for 4-5 mins on each side, until cooked through.
    Meanwhile, cook linguine in boiling salted water according to directions on package. Drain. Mix with remaining herbed breadcrumbs and 2 tbsp oil.
    Serve salmon and linguine with a garnish of sliced lemon.
