Chicken And Tomato Soup - cooking recipe

Ingredients
    750 ml chicken stock
    3 None tomatoes, deseeded and cut into thin strips
    1 None chicken breast fillet (about 150g)
    1 tsp butter
    200 g leeks, cut into thin strips
    1 clove garlic, peeled and crushed
    3 sprigs fresh thyme, leaves stripped from stems and chopped
Preparation
    Place the stock and tomatoes in a saucepan and crush the tomatoes slightly. Add the chicken, bring to a boil, cover and simmer for 15 mins. Remove the chicken from the pan, allow to cool slightly and cut into thin strips.
    Meanwhile, heat the butter in a pan and saute the leeks and garlic until softened. Add to the soup along with the chicken strips and thyme. Season to taste.
