Warm Pasta Salad With Smoked Trout And Asparagus - cooking recipe

Ingredients
    12.5 oz pasta bows
    1 bunch asparagus, trimmed, stems cut into 1 inch pieces
    4 oz frozen peas
    3.5 oz sugar snap peas, trimmed
    5.25 oz smoked trout, flaked
    1 tbsp fresh parsley, chopped
    2 tbsp olive oil
    2 tbsp lemon juice
    3.5 oz ricotta cheese, crumbled, to serve
Preparation
    Cook pasta in boiling, salted water until al dente. Drain.
    Meanwhile, place asparagus, peas and sugar snap peas in a microwave-safe bowl with 1 tbsp water. Cover with plastic wrap. Microwave on High (100%) for 1-1 1/2 mins, until just tender. Drain. Alternatively, steam until just tender.
    To serve, toss pasta with vegetables, trout, parsley, olive oil and lemon juice. Season. Top with ricotta.
