Mini Meringue Nests - cooking recipe

Ingredients
    2 None egg whites
    1/2 cup sugar
    Few drops pink food coloring
    3/4 cup heavy cream, whipped softly
    1/4 cup sweetened flaked coconut, toasted
    72 None sugar-coated mini Easter eggs
Preparation
    Preheat the oven to 250\u00b0F. Line 2 large baking sheets with foil; spray foil with no stick cooking spray.
    Beat egg whites in a clean medium bowl with an electric mixer on medium speed until soft peaks form. Add sugar, 1 tbsp at a time, beating until it dissolves and meringue is stiff and glossy. Add coloring and beat to combine.
    Spoon level tablespoonfuls of mixture onto prepared pans to form 24 nests.
    Bake for 30 mins. Cool in turned-off oven, with the door ajar to let the nests fully dry out.
    Spoon rounded teaspoons of whipped cream into each nest. Arrange nests on toasted coconut on a serving tray. Place mini Easter eggs in nests.
