Herby Egg Tortilla Rolls - cooking recipe

Ingredients
    2 None plum tomatoes, quartered
    None None Olive oil, for drizzling
    4 None flour tortillas
    4 slices ham
    6 None eggs
    1/3 cup milk
    1 tbsp chopped fresh flat-leaf parsley
    1 tbsp chopped fresh chives
    1 tbsp butter
Preparation
    Preheat the oven to 350\u00b0F. Line a baking pan with parchment paper. Arrange tomatoes, cut-side up, on prepared pan. Drizzle with olive oil and season to taste. Bake for 15-20 mins, until beginning to collapse.
    Meanwhile, warm tortillas according to package directions. Top each with a slice of ham. Whisk eggs, milk and herbs in a medium bowl. Season to taste.
    Melt butter in a small saucepan on low heat. Pour in egg mixture. Cook gently, stirring occasionally, for 3-5 mins, until egg is just set but very creamy.
    Spoon egg mixture and tomatoes onto warm tortillas. Roll up and serve immediately.
