Meatloaf Cups - cooking recipe

12 slices multigrain bread, crusts removed and reserved
2 tsp olive oil
1 None small shallot, grated
1 slice bacon, finely chopped
9 oz ground beef
1 None carrot, grated
1 None large egg, lightly beaten
1 tbsp fresh parsley leaves, chopped
1/4 cup barbecue sauce, plus extra to serve
1 oz grated cheese of choice
6 None cherry tomatoes, halved

Preheat oven to 350\u00b0F. Lightly grease a 12-cup muffin pan.
Using a rolling pin, flatten each slice of bread then use to line recesses. Lightly coat with oil and bake for 4-5 mins, until firm to touch.
Transfer bread crusts to a food processor and process to fine crumbs.
In a small frying pan, heat oil over medium heat. Saute shallot and bacon for 2-3 mins, until golden brown. Transfer to a large bowl and let cool slightly.
Add ground beef, carrot, egg, parsley, barbecue sauce and 1/2 cup breadcrumbs to bacon mixture. Season. Distribute between bread cups and sprinkle with cheese. Press 1/2 a tomato into each cup, cut-side up. Bake for 20-25 mins, or until cooked through. Let cool in pan.
