Chicken Noodle Patties - cooking recipe

7 oz udon noodles
14 oz ground chicken
3 None green onions, thinly sliced
1 small carrot, finely grated
1 small zucchini, finely grated
1/2 cup soft fresh breadcrumbs
2 tbsp vegetable or peanut oil
Preparation

Soak noodles in boiling water in a large heatproof bowl for 1 min. Stir to separate strands, then drain. Return to bowl. Use kitchen scissors to snip noodles into short lengths.
Add ground chicken, onion, carrot, zucchini and breadcrumbs to noodles; mix well. Shape into 12 patties.
Heat oil in a large skillet on medium-high heat. Cook patties, in batches, for 3-4 mins on each side or until cooked.
Serve patties with Asian greens and sweet chili sauce.
