Banana Cake With Cinnamon Icing - cooking recipe

Ingredients
    3 None bananas, 2 peeled and mashed, 1 peeled and sliced
    2 1/2 tsp cinnamon
    1/4 lb brown sugar
    1 tsp vanilla extract
    2/3 cup oil
    1 pinch salt
    2 1/3 cup all-purpose flour
    1 tsp baking powder
    1/2 cup soy milk
    3 oz unsalted peanuts, coarsely chopped
    6 oz Cocolate sandwich cookies, 2/3 coarsely chopped
    1/2 cup powdered sugar
    2/3 cup heavy cream
Preparation
    Preheat the oven to 350\u00b0F. Mix the mashed bananas, 2 tsp of cinnamon, the sugar, vanilla extract, oil and a pinch of salt with a hand mixer. Stir in the flour and baking powder, alternating with 3/4 of the soy milk, then fold in the peanuts and the chopped cookies. Pour the dough into a greased and floured 10 inch diameter spring form cake pan and smooth the top. Bake for about 30 mins and cool on a wire rack.
    To make the icing, set a saucepan over medium heat, add the remaining soy milk, the powdered sugar, cream and remaining cinnamon and whisk until smooth. Set aside to cool. Remove the cake from the pan and put it on a plate. Spread 2 tbsp of icing on the cake and lay the slices of banana and the whole cookies on top. Top with the remaining icing and serve.
