Lentils With Broccoli And Brown Rice - cooking recipe

Ingredients
    1 cup French green lentils or brown lentils, rinsed
    1 cup brown rice
    1 tbsp peanut oil
    5 oz shiitake mushrooms, quartered
    2 tbsp soy sauce
    3 cloves garlic, crushed
    1 None red chili pepper, thinly sliced
    1 None red pepper, seeded and cut into chunks
    1 bunch broccoli, cut into florets
    None None Chili sauce, to serve
Preparation
    Place lentils and 2 cups water in a medium saucepan on high heat. Bring to a boil. Reduce heat to low and simmer for 5 mins. Remove from heat. Let stand, covered, for 45 mins. Drain.
    Meanwhile, place rice and 2 cups water in a large saucepan on high heat. Bring to a boil. Reduce heat to low; cover and simmer for 40-45 mins, until just tender. Drain.
    Heat oil in a wok or large skillet on high heat. Add mushrooms and 1/2 each of the soy sauce, garlic and chili pepper. Stir-fry for 1-2 mins, until tender. Add pepper and broccoli. Stir-fry for 2-3 mins, until tender.
    Add lentils, rice and remaining soy, garlic and chili pepper. Stir-fry until heated through. Serve with chili sauce.
