The Perfect Fried Potatoes - cooking recipe

Ingredients
    2 2/3 lbs russet potatoes
    4 tbsp canola oil
    2 oz ham steak, cut into cubes
    2 None small onions, peeled and cut into rings
    3-4 stems parsley, finely chopped
Preparation
    Cook the potatoes in boiling salted water for about 20 mins, ideally the day before you need them. Drain the potatoes, rinse them in cold water, peel them and leave them to cool.
    Slice the potatoes into 1/4 inch thick slices. Heat the oil in a large, non-stick pan over medium heat, sear potatoes for about 6 mins on both sides until golden. Add the ham and onion rings and cook them for 3-4 mins. Season to taste, add the parsley and serve the potatoes in the pan.
