Fruit Salad With Cool Ginger Cream - cooking recipe

Ingredients
    1 tbsp apricot jam
    1 None lemon, juiced
    1 tsp honey
    1.2 lb green and purple grapes, halved
    1 None mango, destoned, peeled and cut into strips
    3 None oranges, peeled all pith removed, sliced
    1 baby pineapple, peeled, quartered, core removed and cut into wedges
    2 None bananas, peeled and sliced
    1 None pomegranate, halved, seeds taken out
    1 lb vanilla ice cream, thawed
    1 tbsp ground ginger
    1 None starfruit, thinly sliced
    None None mint leaves, to decorate
Preparation
    Warm the apricot jam in a pan with the lemon juice and honey. Leave to cool. Add all the fruit except for the starfruit and let stand for 15 mins.
    Whisk the ice cream with the ginger and spoon into 6 shallow dessert bowls. Top with the fruit salad and decorate with starfruit and mint leaves.
