Egg, Corn And Feta Cheese Wraps - cooking recipe

Ingredients
    6 None eggs, at room temperature
    4 oz frozen corn kernels, thawed
    3 None spring onions, thinly sliced
    1 oz low-fat feta cheese, crumbled
    4 None wholewheat flour tortillas, warmed, to serve
    2.5 oz baby spinach
Preparation
    Whisk together eggs and 2 tbsp water. Lightly coat a medium nonstick frying pan with oil. Place over medium heat.
    For each omelette, add 1/4 of egg mixture and tilt to cover base. Cook for 1 min. Sprinkle with 1/4 each of corn, onions and feta. Fold in half and cook for 2 mins. Remove from pan and cut in 1/2.
    Place tortillas on a clean work surface. Top with spinach and omelettes. Fold in edges and roll up to enclose filling.
