Lemon, Lime And Bitters Sorbet - cooking recipe

4 None lemons, halved lengthwise, 1 cup juice reserved, strained
1/2 cup granulated sugar
6 oz Orange or citrus bitters

Place 6 lemon halves on a baking tray. Scrape out pulp. Freeze for 2 hours, or until firm.
Meanwhile, combine sugar and 1 cup water in a saucepan over medium heat. Cook, stirring, for 2 mins, or until sugar dissolves. Bring to a boil and cook, without stirring, for 1 min. Remove from heat. Let cool to room temperature.
Once cool, add lemon juice, bitters and 1/2 cup water to syrup. Transfer to a loaf pan and freeze for 3 hours, or until firm. Working quickly, use a metal spoon to break up sorbet. Process in food processor until smooth. Return to pan and freeze for 3 hours, or until firm. Serve scoops of sorbet in frozen lemon shells.
