Strawberry Jam - cooking recipe

Ingredients
    5 pints strawberries, washed, hulled, halved
    2 None lemons, juiced
    5 cups sugar
    2 tbsp citrus pectin
Preparation
    In a large bowl, combine strawberries and lemon juice. Add 3 3/4 cups sugar. Set aside to marinate for 3-4 hours or overnight.
    Whisk together remaining sugar and pectin.
    Transfer strawberry mixture to a large non-reactive pot. Add 1/2 cup water and stir to combine. Sprinkle pectin sugar over mixture and continue stirring until completely incorporated. Bring to a slow boil and cook for 20-25 mins, stirring occasionally and skimming toward the end of cooking time to remove any impurities, until fruit collapses and jam reaches gelling point.
