Potato Rösti With Caramelized Apple Compote - cooking recipe

Ingredients
    3.5 oz bacon
    3 1/4 lb baking potatoes, grated, drained for 10 mins
    2 None eggs
    2 None onions, finely sliced
    1 pinch grated nutmeg
    8 sprigs fresh marjoram, 2 sprigs reserved for garnish, remainder chopped
    2 tbsp granulated sugar
    1 lb apples, peeled, cored and diced
Preparation
    Preheat oven to 325\u00b0F. Line a 10 inch baking dish with bacon. Combine potatoes, eggs, onions, nutmeg and chopped marjoram. Season then transfer to prepared baking dish and bake for 1 hour 45 mins.
    Meanwhile, caramelize sugar. Add diced apples, cover and simmer for about 15 mins.
    Transfer rosti to a serving platter. Serve garnished with marjoram sprigs and apple compote.
