Rock Cakes - cooking recipe

Ingredients
    2 1/4 cups self-rising flour
    1/2 tsp ground ginger
    4 1/2 tbsp butter or margarine
    6 oz mixed dried fruit
    1/2 cup granulated sugar, plus 1 tbsp
    1/2 cup low-fat milk
    1 None medium egg, beaten
Preparation
    Preheat oven to 400\u00b0F. Lightly coat a baking tray with oil.
    Sift flour and ground ginger into a bowl. Cut in butter. Stir in dried fruit and 1/2 cup sugar. Make a well in the center and mix in milk and egg. Scoop out into small, rough heaps on prepared tray. Sprinkle with remaining sugar and bake for 10-15 mins. Transfer to a wire rack to cool completely.
