Ingredients

1 tbsp olive oil
2 None red onions, thinly sliced
1/2 tsp thyme leaves
2 tbsp balsamic vinegar
2 tbsp brown sugar
2 sheets frozen puff pastry, thawed
1 None egg, lightly beaten
8 oz feta cheese, crumbled
Preparation

Preheat the oven to 425\u00b0F. Line a baking pan with parchment paper.
Heat oil in a medium saucepan on low heat. Cook onion and thyme 20-25 mins, stirring occasionally to prevent burning. Stir in vinegar and sugar; cook further 10-15 mins, until thick and 'jammy'.
Using a 2 3/4-inch round cutter, cut out pastry circles. Arrange on prepared pan; brush lightly with egg.
Bake 5-7 mins, until puffed and golden. Cool slightly on pan. Top each pastry round with feta and caramelized onions. Serve.
