Lemon Herb Calamari And Fries - cooking recipe
Ingredients

1/2 cup all-purpose flour, seasoned
2 None large eggs, beaten
1/2 cup breadcrumbs
1 tbsp flat-leaf parsley, finely chopped
2 tsp grated lemon zest
1 lb calamari rings
None None Oil for deep frying
4 None potatoes, peeled, cut into French fries
None None Tartar Sauce
1/3 cup mayonnaise
1/4 cup sour cream
1 tbsp capers
2 None small pickles, finely chopped
2 tsp lemon juice
Preparation

Place flour, eggs and breadcrumbs in separate bowls. Mix parsley and zest into breadcrumbs.
Dust calamari with flour, shaking off excess. Dip into egg, then breadcrumbs, pressing to adhere. Arrange on a baking sheet and chill for 15 mins.
Heat enough oil for deep frying (about 3 inches deep) in a large saucepan on high until a few crumbs sizzle immediately when they are added. Fry potatoes for 2-3 mins, until lightly golden. Drain on paper towels.
Bring oil back to frying temperature, adding more if necessary, and fry the calamari in 3 batches for 1-2 minutes each, until golden. Drain on paper towels. Keep warm.
Add fries back to oil and fry again for 2-3 mins, until golden and tender. Drain on paper towels.
For tartar sauce, combine all ingredients in a small bowl and season to taste. Serve calamari with fries and tartare sauce.
