Spicy Beef Pilaf - cooking recipe

2 tsp oil
1 lb ground beef
1 large onion, thinly sliced
1/2 tsp ground cumin
1/2 tsp paprika
1/2 tsp turmeric
1 1/2 cups basmati rice
3 cups chicken stock
1 cup frozen peas, thawed
2 None tomatoes, finely chopped
1/2 cup currants
1/2 cup chopped fresh flat-leaf parsley, plus additional, for garnish
None None Plain yogurt, to serve
Preparation

Heat oil in a large saucepan on high heat. Brown ground beef for 4-5 mins, breaking up lumps with a spoon as it cooks. Transfer to a plate; cover to keep warm.
Saute onion in same pan for 5-6 mins, until golden. Stir in spices and cook, stirring, for 1 min, or until fragrant.
Blend in rice and stock. Bring to a boil on high heat, stirring. Reduce heat to low; simmer, covered, for 12-15 mins, until stock is absorbed.
Fluff pilaf with a fork and stir in ground beef, peas, tomatoes, currants and parsley. Cover and let stand for 5 mins. Serve with a dollop of yogurt sprinkled with additional parsley.
