Chicken Macaroni And Cheese - cooking recipe

9 oz macaroni
1/4 cup butter
1/3 cup all-purpose flour
3 cups milk
1 cup grated Cheddar cheese
3/4 cup finely grated parmesan cheese
11 oz cooked chicken, shredded
3 oz frozen peas, thawed
.5 oz chives, finely chopped
Preparation

Preheat the oven to 425\u00b0F. Cook the pasta according to package instructions. Drain and return to the pan.
Meanwhile, melt the butter in a medium saucepan, then add the flour. Cook, stirring, for about 2 mins or until the mixture thickens and bubbles. Gradually stir in the milk and cook, stirring, until the sauce boils and thickens. Remove from the heat, then stir in half the cheeses. Season to taste.
Mix the pasta, chicken, peas, chives and half of the sauce until the sauce coats all the ingredients. Spread the mixture in a shallow 8 1/2 cup casserole dish, then cover the top with the remaining sauce and the rest of the cheeses. Bake for about 20 mins or until browned. Serve hot.
