Tangy Lemon Squares - cooking recipe

1/2 cup butter, softened
1/4 cup powdered sugar, sifted, plus extra for dusting
1 1/3 cups all-purpose flour, sifted
3 None large eggs
1 cup granulated sugar
2 tsp lemon zest
1/2 cup lemon juice
Preparation

Preheat oven to 350\u00b0F. Grease a shallow 9 1/2 inch square cake pan and line base and sides with parchment paper, extending paper 2 inches above sides.
In a stand mixer, beat butter and powdered sugar until smooth. Mix in 1 cup flour until combined. Transfer to prepared pan and press into base. Bake for 15 mins, or until lightly browned.
Meanwhile, beat eggs, granulated sugar, remaining flour, lemon zest and lemon juice in a bowl until combined. Pour over hot base. Bake for 20 mins, or until firm. Let cool on a wire rack in the pan. Cut into squares and dust with powdered sugar to serve.
