Lobster And Mango Salad - cooking recipe

Ingredients
    2 None cooked small lobsters, halved, lengthways, cleaned
    1 head little gem lettuce or romaine, trimmed, leaves washed
    1 None mango, peeled, cut away from pit, and sliced
    4 oz roasted red pepper, sliced
    2 tbsp chopped chives
    None None For the Caper Dressing
    1/4 cup olive oil
    1 tsp white wine vinegar
    1/4 cup capers, drained and chopped
    1 tsp chopped dill
Preparation
    Remove flesh from lobster. Roughly chop. Place in a large bowl with lettuce leaves, mango, pepper and chives.
    To make caper dressing, whisk all ingredients together in a small bowl. Season to taste.
    Drizzle dressing over salad just before serving, tossing gently.
